Traditional hand-pulled noodles from ancient Xi’an now being served in Dubai.

The open kitchen is the first thing you see when you walk into San Wan, leaving no doubt that the noodles are, in fact, hand-pulled. Specialising in the ancient Shaanxi tradition of hand-stretching wheat dough into long, silky strands, every portion is made fresh to order. The place is always buzzing, and snagging a table can require a little luck, but once you’re seated, it’s well worth the wait.

Start with the small plates: the refreshing smashed cucumber salad and zingy shredded potatoes. Both are perfectly spiced and an absolute must. The handmade chicken wontons (we picked boiled over fried) are just the right ratio of filling to wrapper. Doused in soy sauce, they’re light, savoury and incredibly moreish.

The traditional Biang Biang noodles arrive in broad, hand-pulled ribbons, topped with green onions, garlic and chilli powder before being drizzled with hot oil. Soy sauce and Chinese black vinegar add a subtle savoury tang, alongside fresh pak choy. The noodles hit the mark on every level and are the star of the dish: thick, satisfyingly chewy and perfect for soaking up the sauce.

Vegetarians will be pleased to find tofu available across all the noodle dishes. Whatever your combination, each bowl is hearty and satisfying, especially when topped with your protein of choice. The secret to our perfect bowl is the homemade chilli oil, which delivers just enough heat and that addictive, mouth-numbing tingle.
